Veggie Burgers & Sweet Potato Fries

Mmm…burgers.  I like a good veggie burger, especially one I can make at home.  No, I’m not talking about those burger patties you get in the freezer section. I’m talking about a nice, thick veggie burger made with black beans or lentils or chickpeas.  It won’t replace your angus beef burger, but it will be a nice, healthy meal in a pinch.

This chickpea recipe is from Heidi Swanson of 101 Cookbooks, and is in her book, Super Natural Cooking.  The suggestion for this burger is to slice the patty in half and then stuff that with fixins to your heart’s content, using the burger as a bun.  This is a great idea, because veggie burgers usually get drowned and dried out by bread bunds. Only I didn’t do that. Instead, I made an extra-thick, extra-moist patty, using as few bread crumbs as possible. Usually, my experiments don’t turn out well, but this one was pretty good.

And to top everything off, some sweet potato fries. They were a perfect side, because I got a fry-fix and they were pretty healthy. Just cut a sweet potato up, salt and pepper, cook for 15 minutes at 450°F.
